Ingredients:
- 2 teaspoons baking powder
- 1 large egg
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- Your favorite pizza toppings (e.g., pepperoni, diced bell peppers, sliced olives, mushrooms, etc.)
- 1/2 cup milk
- 1/4 cup oil
- 1 tbs Smokin Jon’s Pizza & Pasta Spice
- 1 tbs Smokin Jon’s SPGO spice
- 1 1/2 cups all-purpose flour
Instructions:
1. Preheat the Grill: Preheat your grill to medium heat, around 375-400°F (190-200°C). Place the Napoleon cast iron muffin tray on the grill to preheat as well.
2. Prepare the Muffin Batter: In a large bowl, whisk together the flour, baking powder, and spices until well combined.
3. In a separate bowl, whisk together the pizza sauce, milk, oil, and egg until smooth.
4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
5. Mix in Pizza Toppings: Add shredded mozzarella cheese, and your favorite pizza toppings (e.g., pepperoni, diced bell peppers, sliced olives, mushrooms, etc.) to the muffin batter. Stir until the toppings are evenly distributed throughout the batter.
6. Fill the Muffin Tray: Lightly grease the Napoleon cast iron muffin tray with oil to prevent sticking. Fill each muffin cup about three-quarters full with the pizza muffin batter.
7. Grill the Pizza Muffins: Carefully transfer the filled muffin tray onto the preheated grill. Close the grill lid and cook for about 12-15 minutes, or until the muffins are cooked through and golden brown.
