Parmesan & Herb Fries using a Napoleon rotisserie basket.



These Parmesan and herb fries, seasoned with Smokin Jon’s Herb & Spice Mix and cooked in the Napoleon rotisserie basket, will be a flavorful and crispy treat!

Ingredients:
- 4 large russet potatoes
- 2 tablespoons olive oil
- 2 tablespoons Smokin Jon’s Herb & Spice Mix
- 1/2 cup grated Parmesan cheese


Instructions:

1. Prepare the Potatoes:
  - Cut the potatoes into evenly sized fries, about 1/4 inch thick.

2. Preheat the Grill:
  - Preheat your grill to medium-high heat (about 400°F / 200°C).
  - Attach the Napoleon rotisserie basket to the rotisserie rod and place it on the grill to preheat as well.

3. Season the Fries:
  - In a large bowl, toss the potato fries with olive oil and Smokin Jon’s Herb & Spice Mix until evenly coated.

4. Load the Rotisserie Basket:
  - Carefully place the seasoned fries into the preheated rotisserie basket.
  - Secure the basket and attach it to the rotisserie spit on the grill.

5. Cook the Fries:
  - Turn on the rotisserie motor and close the grill lid.
  - Cook for about 30-40 minutes, or until the fries are golden brown and crispy.

6. Add Parmesan and Herbs:
- Once the fries are cooked, carefully remove the basket from the grill.
- Transfer the fries to a large bowl and immediately toss with grated Parmesan cheese so that the cheese melts slightly.

7. Serve and Enjoy:
- Serve the Parmesan and herb fries hot with your favorite dipping sauces.
