Chicken Naan Nachos with Guacamole



Ingredients:
- 2 chicken breasts
- 2 pieces of naan
- 1 cup broccoli florets, chopped
- 1 cup cherry tomatoes, halved
- 2 avocados
- 1 cup corn kernels
- 1 cucumber, diced
- 1-2 jalapeños, sliced
- 1 cup shredded cheese (cheddar, Monterey Jack, or a blend)
- cooking oil
- Salt and pepper
- 1/4 cup red onion, finely diced (optional, for guacamole)
- 1 lime

Instructions:

1. **Prepare the Ingredients:**
  - Season the chicken breasts with salt and pepper
  - Halve the cherry tomatoes.
  - Dice the cucumber.
  - Slice the jalapeños.
  - Chop the broccoli florets into small, bite-sized pieces.
  - Finely dice the red onion (for guacamole).

2. **Grill the Chicken:**
  - Preheat your grill to medium-high heat.
  - Brush the chicken breasts with oil and place them on the grill.
  - Grill the chicken for 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C).
  - Remove from the grill and let rest for a few minutes, then slice into thin strips or shred, then mix chicken with smokin johns cubano bbq sauce and fajita spice.

3. **Grill the Naan and toppings:**
  - Brush the naan with a little oil and place it on the grill. Grill for about 1-2 minutes on each side, until slightly crispy and grill marks appear.
  - in a cast iron griddle, heat a bit of oil over medium heat.
  - Add the chopped broccoli and corn kernels to the griddle. Cook for about 5-7 minutes, stirring occasionally, until the broccoli is tender and slightly charred.

4. **Prepare the Guacamole:**
  - In a bowl, mash the avocados until smooth.
  - Add the finely diced red onion.
  - Squeeze the juice of one lime into the bowl.
  - Season with salt and pepper to taste.
