Grilled Beef and Vegetable Skewers



Ingredients:
- 1 lb beef, cut into 1-inch cubes
- 2 sweet potatoes, peeled and cut into 1-inch chunks
- 1 small squash (zucchini or yellow squash), cut into 1-inch slices
- 4 carrots, peeled and cut into 1-inch pieces
- 1 cup mushrooms, halved if large
- 2 bell peppers (any color), cut into 1-inch pieces
- 1 bunch asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp oil
- Salt and pepper, to taste

Instructions:

1.  Preheat your grill to medium-high heat.

2. **Pre-Cook the Vegetables:**
  - Place a stainless steel wok on the grill and heat it up.
  - Add a bit of oil to the wok.
  - Add the sweet potato, squash, and carrot pieces to the wok.
  - Cook, stirring occasionally, for about 10-12 minutes, or until the vegetables are slightly tender but not fully cooked.
  - Remove from the wok and let cool slightly.

3. **Marinate the Beef:**
  - In a small bowl, toss the beef cubes with 2 tbsp of BBQ sauce, olive oil, salt, pepper and BBQ rub. Let it marinate for at least 15 minutes.

4. **Assemble the Skewers:**
  - Thread the beef cubes, pre-cooked sweet potato, squash, carrots, mushrooms, bell peppers, and asparagus onto the skewers, alternating the ingredients for a colorful presentation.

5. **Season the Skewers:**
  - Brush the vegetable skewers with the remaining oil mixture, ensuring all sides are coated. Lightly season with additional rub if desired.

6. **Grill the Skewers:**
  - Place the skewers on the preheated grill.
  - Grill for 10-15 minutes, turning occasionally, until the beef is cooked to your desired level of doneness and the vegetables are tender with nice grill marks.

7. **Add the Steak Sauce:**
  - During the last few minutes of grilling, drizzle the remaining sauce over the skewers, turning them to coat evenly. Allow the sauce to caramelize slightly on the grill.

8. **Serve:**
  - Remove the skewers from the grill and transfer them to a serving platter.
  - Optionally, drizzle a little more steak sauce over the top before serving.
