Doritos Pizza Quesadillas



Ingredients:

- 10 mini tortilla shells
- 1/2 cup pizza sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup pepperoni slices (or other preferred pizza toppings)
- 1 cup Nacho Cheese Doritos, crushed
- 1/4 cup melted butter
- 2 tablespoons Smokin Jon’s Pizza & Pasta Spice
- Ranch dressing for dipping

Instructions:

1. Preheat your Napoleon grill to medium heat, around 375°F (190°C). Place the flat Napoleon cast iron griddle on the grill to preheat.
2. Lay out 5 mini tortilla shells on a clean surface
3. Spread a thin layer of pizza sauce on each tortilla shell.
4. Sprinkle shredded mozzarella cheese evenly over the sauce.
5. Add pepperoni slices or other desired toppings.
6. Place the Doritos in a ziplock bag and crush them into fine crumbs. Then sprinkle inside the tortilla. Also, Sprinkle Smokin Jon’s Pizza & Pasta Spice
7. Top each tortilla with another tortilla shell, pressing down gently.
8. Brush each side of the assembled quesadillas with melted butter. 
9. Place the quesadillas on the preheated griddle. Grill for about 3-4 minutes per side, or until the tortillas are golden and crispy, and the cheese inside is melted. Use a spatula to carefully flip the quesadillas to avoid spilling the filling.
10. Remove the quesadillas from the griddle and let them cool for a minute.
11. Slice into wedges and serve with ranch dressing for dipping, if desired.
